Soaking Beans and Lentils Just Became Easier
It is recommended that we soak beans and lentils before cooking. One reason for this is that it shortens the cooking process, and increases mineral absorption in the body. The soaking process also removes raffinose, a carbohydrate that isn’t digested well in the body and causes gas, found in lentils and beans.
We should soak the legumes overnight, but microwaves can help us reduce the soaking length. Place the grains in a microwave-safe bowl with water, add some baking soda, and microwave for ten minutes.
